Meatless Monday: Veggie Panini with Cilantro-Lime Mayo

Oh, how I love cilantro. We had a fresh bunch of it in the fridge, just waiting to be used. A few nights ago I made a cilantro dipping sauce for some vegetable samosas my dad brought home from the grocery store. Yesterday I decided to jazz up some mayo with the leftover cilantro and create a delicious grilled panini for lunch. This may have been one of the best sandwiches I’ve ever made. It’s a little bit more time consuming to make than your standard PB & J, but definitely worth it! The cilantro-lime mayo was subtle enough that it did not overpower the rest of the flavours in the sandwich, but you could still taste it.

Veggie Panini with Cilantro-Lime Mayo

Ingredients:

2 slices whole wheat/whole grain bread
Roasted yellow bell peppers
Steamed asparagus
Sautéed mushrooms and zucchini
Feta cheese

Cilantro-Lime Mayo:
2 tbsp reduced fat mayonnaise
2 tsp fresh lime juice
1 tsp lime zest
1 tbsp finely chopped cilantro

Directions:
To make the mayo, simply mix all the ingredients together and spread the amount you like on one of the bread slices. Top with the veggies and cheese and gently transfer to a sandwich press to grill it. Yum yum :)
